Ingredients

1/2 cup chutney dhall/pottu kadalai
1/2 cup powdered sugar (increase  if you like more sweet)
1/3 cup melted ghee
1/2 tsp cardamom powder
finely chopped cashew nuts or assorted nuts

Method

  • In a blender make a fine powder /flour of the chutney dhall/roasted gram.
  • In a mixing bowl, sieve together the cardamom powder, gram flour and sugar .
  • In a tsp of ghee roast the finely chopped cashew nuts until golden brown and add it to the bowl.
  • Slowly pour the melted ghee and mix well until you get a crumbly mixture. The ghee has to be midly hot . As soon as you pour the ghee take a spoon and mix the ghee quickly.
  • If you feel the mixture is too dry you can add a tsp of ghee or if the mixture feels too soggy, add in a little gram flour.
  • Grease your palm with ghee and make small balls/laddus from the mixture and store it in an air  tight container.
  • The shelf life is about a week in room temperature. Can be stored in fridge as well.
Notes :
  • If you do not have cardamom powder ready at hand, break open the pods of  4-5 cardamoms and grind it along with the chutney dhall.
  • To make powdered sugar at home just blend the crystal sugar in a blender into a fine powder.
  • Instead of roasting the cashews in ghee , you can blend it along with the roasted gram , this way you will have a seamless experience while biting into the ladoo.
  • I also pulse some almonds and pistachios too while powdering the roasted gram. This is purely optional.
