Instant Microwave Eggless Cake

I have baked cocoa based cakes and also vanilla sponge cakes,but trying this kind of a fresh fruit cake was a new experience for me. I had a lot of fresh strawberries lying in my fridge,not sure of how to consume the entire lot,I tried to bake a normal vanilla sponge cake and gave it a nice strawberry fresh cream icing.
 
Preparation time - 15 mins
Cooking time - 10 mins

Ingredients

1 cup Maida / All Purpose flour
1 cup Milk
1 cup powdered sugar
1/2 cup butter (softened)
1tsp vanilla essence
1tsp baking soda
pinch of salt

Method

1. Sieve the flour along with the baking soda
2. Beat the butter and sugar until the butter is soft and fluffy.
3. Slowly fold in the flour into the butter.
4. Add milk and blend well until a smooth batter is formed.
5. Add the vanilla essence and mix well.
6. Grease a microwave safe vessel and dust it lightly with flour.
7. Pour the batter into the vessel and microwave for about 8 mins.
8. try and cover the vessel with a microwave safe lid. This prevents the edges of the cake from drying.
9. Insert a knife to see if done.If its still undone you may microwave for another minute or two.
10.Demould the cake and let it cool before you do the icing.

Notes :
1.For this cake, I just spread a layer of fresh strawberry sauce blend with fresh cream and topped the cake with fresh strawberry.
2. If you desire chocolate cake, you can add a teaspoon of cocoa powder while sieving the flour and baking powder.
3. Another variation could be addition of some finely chopped dry fruits like dates,almonds,walnut ,raisins and cashew nuts
