Mix veg Kurma - No Onion No Garlic - Video Recipe


Many of the households donot make use of onion and garlic on regular days and some on special occassions like Amavasai,Festive days,Pooja days etc etc.
The general feel is making gravies without onion and garlic will not be tasty and hence many of them donot attempt making gravies at all. 
Donot worry,try this gravy and you will really love to eat No Onion No Garlic recipes .

Ingredients

To roast & grind
2 tsp dhaniya seeds
1/2 tsp pepper
10-12 cashews
2-3 cloves/lavangam
4-5 kashmiri dry red chilles / byadgi chilly
2-3 tablespoon fresh grated coconut

For the kurma
Assorted boiled vegetables ( potatoes,carrots,peas,french beans - diced into cubes)
1-2 tomatoes finely chopped
2-3 teaspoon oil
1/2 tsp jeera/cumin
salt to taste
corriander to garnish

Method


  • Dry roast all the ingredients until they turn crsip .
  • Add the coconut and further roast until it turns slightly brown.
  • Cool and grind it finely in a mixies.keep aside.
  • In a kadai,add some oil and splutter the jeera seeds,
  • Saute the tomatoes until soft and mushy.
  • Add the ground masala with 1/4 cup water and cook until the oil separates from the gravy.
  • Add the boiled vegetables with 1/2 cup water and cook until the gravy thickens.
  • Adjust salt and spice at this stage if needed.
  • Serve hot with rotis,rice,naan or any indian bread.

Tips :

Boil the vegetables with a pinch of salt and sugar. This helps enhance the taste of the veggies in the gravy.
